Microgreens, as the name suggests, are vegetables harvested at an early stage, typically before 14 days of germination. In other words, they are picked just as the first leaves begin to form. Recent scientific studies have shown that these microgreens (or microvegetais, as they are also called) offer nutritional benefits that surpass those of conventional vegetables in their mature phase, as the nutrients and antioxidants here are concentrated 4 to 40 times more.
For instance, take red cabbage, whose microgreens are about 40 times richer in vitamin E and 6 times richer in vitamin C than mature red cabbage. But this scenario applies to all other vegetables and herbs as well.
